Chai
I love the flavours of chai, and it makes a perfect warming drink as we head into the colder months. I like to make a batch of this, and then store it in a jug in the fridge to have throughout the week
This recipe works really well with oat milk as well if you need to keep it dairy free!
Ingredients:
Makes 4 mugs worth
1.5 litres water
3tbsp loose leaf tea (assam works very well), or 2 teabags
18 slices of fresh ginger (don't worry about peeling it!)
25 cardamom pods
4 cinnamon sticks
10 cloves
50g caster/granulated sugar
500ml milk of choice
Method:
- Add the water, tea, ginger and spices to a large saucepan over medium heat. Bring to a simmer, and simmer for about 25 minutes.
- Add the sugar and milk to the pan. Heat for about 10 minutes, stirring regularly to prevent the milk from sticking to the bottom of the pan.
- Strain the chai through a sieve into a large jug. This will catch the spices and tea leaves. Leave to cool down before drinking, or storing in the fridge. It should keep for about 4 days in the fridge.
