Banana porridge

Banana porridge

I love porridge, and I make it very often, so I like to rotate through different recipes to get some variety. Here's one of my favourite recipes, adding banana to help you get one of your five a day.

I usually make this with soy milk, making it vegan, but use whichever milk you prefer!

Ingredients:

Makes one bowl

40g jumbo oats
250ml milk of choice
1tsp golden syrup (you might want to add more if you have a sweet tooth)
pinch of salt
1 banana
pinch of ground cinnamon (optional)
1tsp peanut butter (optional)

Method:

  1. Add the oats, milk, syrup, and salt to a small pan. Cook over a medium heat, stirring frequently.
  2. While the oats are cooking, mash about two thirds of the banana, and slice the other third.
  3. When the oats have swollen and the porridge is starting to ticken (normally after 8-10 minutes for big oats), add the mashed banana. This will also thicken the porridge slightly, so you might need to add more milk if you prefer a runnier porridge.
  4. Keep stirring the porridge as the banana heats through. After about a minute, the porridge should be ready.
  5. Pour the porridge into a bowl, and top it with the sliced banana. I like to add a pinch of cinnamon and peanut butter on top to finish it off.
