Granola
This recipe is a fully customisable base, so you can add your favourite nuts, seeds and dried fruits to make a granola fully customised to your tastes.
Just as a tip, this base recipe does not make a particularly sweet granola, so you may want to increase the amount of sugar or syrup if you have a sweeth tooth!
Ingredients:
Makes about 15 portions
200g oats
60ml olive oil
Pinch of salt
40g light brown sugar
80g syrup of your choice (I used golden syrup, but honey, date syrup etc would all work!)
30g seeds of your choice (I used pumpkin seeds in this recipe but use any that you like)
50g nuts of your choice (I used almonds)
100g dried fruit (I used dried cranberries – note that this is added after baking!)
You can also throw in any extras that you like, such as cacao nibs, coconut flakes, chocolate etc – just make sure to add these after baking!
Method:
- Preheat the oven to 150°C fan (or 170°C conventional).
- Combine all of the ingredients, except the dried fruit and any other extras, like chocolate, in a large bowl, and mix until everything is evenly coated.
- Spread the mix out evenly onto a large baking sheet lined with baking paper, and bake for 10 mins, until starting to turn golden brown.
- At this point, take the baking sheet out of the oven, and use a spatula to break up the mixture into clumps – these will be your granola clusters.
- Bake for a further 10 or so minutes, until the granola looks nice and toasted.
- Allow the granola clusters to cool before mixing with the dried fruit and any other remaining ingredients, and store in an airtight container until used. It should keep for a good 6 weeks or so. Serve however you like – I like mine with yoghurt and fruit, like in the recipe photo.
