Crumble topping

Crumbles

I love making lots of crumbles with different fruits – pear, rhubarb, apple and even plum, but I always use this recipe for the crumble topping. It uses a bit of salt to stop it being overly sweet, and the use of some demerera sugar gives it a richer flavour, with a hearty texture from the oats. Give it a try!

Ingredients:

Serves 2

35g plain flour
15g oats
30g unsalted butter
10g demerera sugar
10g caster or granulated sugar
pinch of salt

Method:

  1. Use your fingers to rub the butter into the flour and oats until the mixture resembles chunky breadcrumbs.
  2. Stir the two types of sugar and a good pinch of salt through the flour, butter and oat mix.
  3. Sprinkle on top of the fruit, and bake until cooked!
